I love this simple grilled kimchi cheez sandwich with egg on soft and sweet brioche bread. This is one of my go to recipes when I’m wanting comfort food or when my belly is feeling tender. Bringing me back to moments as a kid, and feeding my inner child. Although, I kept it even more simple back then with just cheese and bread. This recipe is simple and quick to make. Paired with kimchi (Korean pickles, fermented spiced cabbage) to add an element of crunch, spice, and gut loving bacteria to help digestion. See recipe below…
First, I begin with an Ayurveda practice before cooking that I love, helping to keep past, present, or future worries and thoughts from being cooked in or stirred into the food. To ground me into the moment before gathering the ingredients. I close my eyes and take a few deep belly breaths. Then, gather all the ingredients and wash my hands.
Now, heating a small and medium sized pan over medium-high. Adding enough oil to cover the bottom of the small pan. Next, adding brioche slices to medium pan, lower heat to medium-low.
Then, I add the eggs to heated small pan. Lowering heat to medium-low. Cooking both sides until over-medium, egg yolks are 80% cooked. Remove eggs and heat kimchi for a few minutes.
Then, shredding the cheez/cheese. Flipping the brioche slices once golden brown. Next, adding the cheese/cheez, kimchi, and egg to one slice. Top with second slice and continue to toast both sides until golden brown.
Repeating the last few steps for multiple grilled kim cheez sandwiches. Enjoy!

Mise en Place : bread, cheese, kimchi, egg, small and medium saute pan, s&p
Comfortable Grilled Lil’ Kim Cheez
4 slices Brioche / Sourdough bread
2 Eggs
1/2 C Kimchi - I recommend Choi’s Kimchi Co.
2/3 C shredded Chao original tofu cheese / shreded cheddar / cheddar slices
Directions
Heat a small and medium sized pan over medium-high. Adding enough oil to cover the bottom of the small pan. Next, add brioche slices to dry medium pan, lower heat to medium-low. If enjoying sourdough, add enough oil to bottom of medium pan to cover. Swirl both sides of bread in oil to lightly coat and toast.
Add eggs to heated small pan. Lowering heat to medium-low. Cooking both sides until over-medium, egg yolks are 80% cooked. Remove eggs and heat kimchi for a few minutes.
Shred cheez/cheese.
Flip brioche slices once golden brown. Then, adding the cheese/cheez, kimchi, and egg to one slice. Top with second slice and continue to toast both sides until golden brown.
Repeat steps 1-4 for multiple grilled kim cheez sandwiches. Enjoy!
